Alta Langa DOCG Extra Brut
Lovers of bubbles, years ago we decided to try making them as an experiment and for personal consumption, then we decided to try selling a bit and from there our Alta Langa was born… from the love of bubbles.
After vinification with gentle pressing of the grapes, light maceration and subsequent fermentation in steel, this wine matures on the lees for about 36 months. In late spring it is bottled with bidule and crown cap where natural refermentation takes place in the bottle followed by aging on the lees.
It appears brilliant, with fine and persistent foam and a straw yellow color; the aroma is intense with notes of ripe red apple and wild rose that coexist with hints of bread crust and honey due to aging in the bottle.
It has a full and powerful flavor with great acid-tannic balance and a delicate aftertaste of candied fruit and toasted hazelnuts.
It pairs with elaborate dishes with a preference for shellfish and white meats, excellent also with medium-aged cheeses, unbeatable with cold cuts and crostini.
